EGG NOODLES WITH SQUIDS’ SOUCE, SAFFRON AND LEMON

Ingredients for 4 people:

500 grams of squid
400g egg noodles
1mg of Navelli saffron in threads
A few grains of pomegranate
Pinch of white pepper
Salt


METHOD
For squid’s ragout finely slice a half leek and send to cooking in a pan with olive oil, add then 500 g of squid cut into rings, salt and a pinch of white pepper send high heat and deglaze with white wine. Soak in a bowl with the hot vegetable stock. Strands of Navelli saffron. Cook in boiling water 400 grams of egg noodles, drain and stir in the baking pan of sauce squid with saffron. Grate the lemon peel untreated. Serve the noodles with squid and decorate with strands of skins lemon and a few grains of pomegranate.
