BREADED ANCHVOIES MEATHBALLS WITH PUNTERELLE SOUCE

Ingredients for 4 people:

for meatballs
1kg of fresh anchovies
1 clove of garlic
zest of 1 lemon
chopped parsley
salt and extra oil
breadcrumbs and egg

for “Puntarelle”
600gr puntarelle cut end
2 anchovy fillets in oil
1 clove of garlic
1 small glass of red wine vinegar
salt and extra oil


METHOD
Bring the fresh anchovies and cook them in a frying pan with garlic, extra oil and salt. When come to cooking, chop and sprinkle with lemon peel and with parsley.
Shape into patties that are passed in the egg and breadcrumbs.
Fry in plenty of olive oil. Serve with the salad of “Puntarelle” seasoned with anchovy sauce and garlic.
